First of all it has to be slightly chilled when you cut it, slice it not thicker than in half an inch slices, to avoid burning, be sure that the frying pan is very hot, before carefully laying slices of foie gras on the frying pan. Fry it up to 30 seconds on each side.

 As for the sides, use salads without dressing, with fruit or berry sauces, baked apples with fresh lettuce leaves, non flavorful mushrooms.

Fruit sauces make a great pairing with foie gras. Pairing it with figs makes it one of the most classic combinations.   


Pate de foie gras

When choosing to make a pate de foie gras – make it entirely your own creation with Sauterne or Armagnac of your choice! It is important to know that when you serve pate de foie gras over bread – do not spread it, but cut and place it in one layer.

When choosing a wine to accentuate a foie gras flavor you should avoid very young and light bodied wines.
